Earlier this month I sampled the Westy clone that we made back in september. Fantastic flavour not quite carbonated enough but it was only in the bottle for 4 weeks or so before I put it in the fridge. I think I may revisit this one in april or so. The faux Swartzbeer was fantastic, Fermented cool with a very neutral alt yeast, This beer is very clean and tasty. My stout is not as dry as I like it but its still a bit green and it is very good so this may not last until St. Patricks day. Brewed my Red on Sunday. I've never been able to achieve the perfect red colour that I want but I'm getting there. I didn't hve enough roasted barley so I took some base grain and roasted it on the stove. My whole house smelled like burning. I think from now on I will just buy my roasted barley like everyone else. Brew day went realatively easy. aside from the stink in my kitchen, however, the cold temperatures gave my a bit of aprehention abouit using my wort chiller. I put the kettle in an ice bath and stirred while pouring the cold water down the sides of the kettle. It is not ideal but it seemed to work better than nothing and I had the wort down to ptching temp in less than 2 hours. I'm not entirely content about the colour but it is certainly redder than any of my other attempts to date.
