My prison hooch has finally ceased to bubble so I will rack it this weekend to clear it up and make sure it is done fermenting and wait a few more weeks and then bottle. 1 more week and I may bottle the stout if I get a chance. Life often delays the brewing and bottling processes but I don't worry about it too much, it is after all just beer.

This is my first post. Nothing really to report on. All is well in the brewery. My AppleWhine is moving along slowly but well. One month on and it is still fermenting but it has slowed tremendously. Last Sunday I brewed my house stout, an dextract recipe that I love to drink. I haven't made a partial high gravity boil for about a year and I had some child problems during the brew and ended up burning some sugar in the pot. The final gravity was still close enough for me and it didn't taste like burning so I'm going to let it go and see how it turns out. The temp in the basement is holding strong at about 68*.
I really want to post pictures of the process but I usually brew alone so I haven't got any yet but soon. On another topic, I raked the leaves and my back yard is a mud pit so muddy paws are all over the house these days. Ancient brewers used to regard this as very good luck. |
