brews
These are recipes for the better brews I have made, all done with 60 min boils. I mash at a water/gain ration of 1.2-1.4/1 usually. It depends on how well I hit my mash temp which is usually 152ish. I do single infusions. I used to always batch sparge it but now that I found out how to do it with what I have I fly sparge. My sparge water is typically around 180. I regularly add a tsp of Irish moss with about 15 remaining in the boil (or @15) . I use tap water which actually is pretty good. I don't know exactly what my actual bitterness is but I plug in the sg and the aa and I use the estimates from beer recipitator, same with color. I think that the products from different setups can vary greatly using the same recipies. I use other peoples recipes as guidelines and starting points for developing my own. Here's what I came up with and how it worked out for me.

I was minding children so ended up mashing for almost 2 hours and boiled for about 80 min.
Primary ferment for 11 days ~65*
dry hop and let sit for 5 more days then bottle

summertime pale ale
An easy drinking and refreshing lightly hopped pale ale

When I made this I failed to mash the full amount of grains, by about half they were in another shopping bag that I left in the car and plum forgot about. So I had to add more extract and turn down the hops and it turned out really good.

A complex sweet stout that gets better with age
2 gallons 8.5%abv 65%efficiency IBU- 48 SRM- 28
This one required a decoction mash because I was reading the metric side of the thermometer and completely missed my strike temp. It started at 122*F so I decocted a quart at a time until I got to 150*F. I thinkk this resulted in some tannin extraction but it doesn't hurt the flavor at all. I also intended to use only fuggles but grabbed cascade hops at first.

I have come to the conclusion that pumpkin doesn't taste like anything so pumpkin ales are really pumpkin spice ales

Mine came out good but could use more pumpkin spice and may be another can of pumpkin for color ant to add some texture. It was a drinkable brew with a hint of pumpkin pie flavor and aroma.

A watermelon wheat. Delicious

I make beer for me to consume to celebrate my son Phiny's birthday. Although I had never had a watermelon wheat beer before but the thought sounded tastey to me and thus was born Phinyweizen 2. Brewday went very smooth and it showed in the results. With the crush on the wheat malt my efficiency was only 40 % but it made a very tastey brew indeed.

2.0 lb pilsner malt
.5lb munich malt
.5 lb rice hulls
.5 oz tettnanger hops @45
11.5g Safbrew wb-06
After primary fermentation I smashed 1 half of a 10 lb seedless watermelon w/ a potato masher in a sanitized bowl. I poured the watermelon juice and pulp into my 3 gall carboy and racked the beer underneath of it in the secondary and I let it sit for 2 weeks before bottling.

Its a pale ale made with Belgian stuff

This was a collaboration between Muddy Paws and the fine fermenting friars at the St Aloysius abbey to create the patersbier for the abby which is located in my basement.

I must admit that this is actually a recipe I got from the Maryland homebrew website. It is an extract brew with some grains but the results are fantastic. It was one of the first brews I made with steeping grains and I continue to make it often because it is awesome

apple whine (aka prison hooch)
I made a gallon of this. I fermented it in the container the juice came in because fruit stains my buckets, carboys and tubes and I only made one gallon. I also made a 1/2 quart starter of previously harvested wlp008
1 gallon of apple juice
1cup brown sugar + 2 1/2 tbs
Remove 2 1/2 cups of juice from bottle. drink 1/2 cup and use the remaining 2 cups with 2 1/2 tbs of brown sugar for the starter. Remove and drink another cup of juice. mix sugar with remaining juice inside container. Add yeast and insert airlock.
